Halloween treats

We decided to have a big cooking day yesterday! Garrett & I roasted our pumpkin seeds.... 2 big batches! One with Cinnamon and sugar and one with garlic, seasoned salt, and paprika....They turned out great!

We let ours dry over night!

So we recommend you don't throw away those pumpkin seeds!
Preheat oven to 300ยบ F. clean off any major chunks.
Toss pumpkin seeds in a bowl with the melted butter or oil and seasonings of your choice. Spread pumpkin seeds in a single layer on an oiled baking sheet. (or spray with cooking spray).
Bake for about 30 minutes or until golden brown.

These are the Cinnamon ones....Don't they just look yummy!?!

Now Garrett helped me so much I felt bad because he can't eat the pumpkin seeds so we found a great little recipe for Boo-rrific cookies (with only 15 calories!) from one of my blogger friends.

Ingredients: 2 egg whites, 1/2 teaspoon vanilla extract, 1/4 teaspoon almond extract, 1/8 teaspoon cider vinegar, 1/2 cup sugar, Orange food coloring, optional,
1-1/2 teaspoons miniature semisweet chocolate chips

Place egg whites in a small mixing bowl; let stand at room temperature for 30 minutes. Add extracts and vinegar; beat on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved, about 6 minutes. Beat in food coloring if desired.
Cut a small hole in the corner of a pastry or plastic bag; insert a #10 round pastry tip. Fill bag with egg white mixture. Pipe 1-1/2-in.-diameter ghosts onto parchment paper-lined baking sheets. Add two chips on each for eyes.
Bake at 250° for 40-45 minutes or until set and dry. Turn oven off; leave cookies in oven for 1 hour. Carefully remove from parchment paper. Store in an airtight container. Yield: 2-1/2 dozen.

Here's one of the Boo-rrific cookies up close!

Adam helped me makes these goody bags full of the different kinds of pumpkin seeds and Boo-rrific cookies for my in laws for Halloween!

And of course I can't have a post without pictures of Garrett!

Garrett loves these cookies!!!!

Happy Birthday Adam!

Today was Adam's first birthday married!...yay! Garrett and I have been so busy today decorating the house! We made posters, and hung streamers everywhere, blew up balloons, wrapped presents & most important baked my first red velvet cake with cream cheese icing! We've been so excited to surprise daddy with all our hard work... and I think we did a good job because he looked pretty surprised! It was great it really made it all worth it!

Just some of all the decorations Garrett & I put up all over the house.

Garrett waiting patiently for his daddy to come home so he could have some cake!

Hayrides & Pumpkins!

We decided to take Garrett to Hunter farm on Sunday after church to let him pick out his pumpkin. I have to say I have been anticipating this trip for weeks but it was a rough visit! Garrett hadn't had a nap so he was kinda grumpy, we dressed for cooler weather and I was burning up....but other then that it was nice. We got to ride on a hayride down to a petting farm where Garrett feed the chickens, lambs, goats, pigs & cows! It's was nice that Adam's family got to join us so it made it a lot of fun!

Garrett & uncle Eric playing on the tracker before we could get on the hayride.

Time to carve pumpkins!!!

Mommy's, Daddy's & baby Garrett's.....My husband did a great carving job!

lazy...

Today Garrett & I decided to be have a lazy Thursday! I'm memorizing medical terms for school and Garrett's laying in mommy & daddy's bed eating snacks and watching his favorite DVD Curious George...I had to post this because he's been cracking me up all morning! He's never just layed in our bed with our laptop to watch a movie so he's so excited and every once in a while he'll just start laughing and when I look he's just glued to the movie (he watches that movie almost everyday and it still makes him laugh...I love that!) and then I hear MONK MONK! That's what he calls George...well that's what he calls his monkey so of course every monkey has to be a monk monk! xoxox

Garrett's HOME!

Nana & Garrett got home Monday from their big adventures in Wilson, NC. I have to say he must have had a great time with all the funny stories Adam & I have heard. He got to spend the night at his Aunt Becky's house with Gracie & Zach and they took him to see horses and Garrett thought they were big dogs so he started making his doggy noises! He's so cute! Then He went to Gran & Pa's house where he just laughed and carried on for everyone...He just loves making you laugh! It's crazy that already he has this little personality. I mean he knows what he likes and dislikes and when your upset he tries to be funny to make you laugh. He's great! And I have to say I've missed him so much if you can't tell!

Anyways...Today we decided to get dressed up and play around with the camera in our back patio and of course I had to post them for ya'll to see!

Mommy's little man looks so grown up here! He leaves for a weekend and comes home all grown up!

The flowers Adam & I planted together this weekend...I have to admit he did do most of the work! But he did such a GREAT job!

Garrett was taking time to stop and smell the flowers! This one's daddy's favorite!

I'm glad that Garrett can get away from mommy & daddy some and take trips with nana but not to often....Mommy misses him way to much! During the day wasn't so bad but it's killed me each night when his little bed was empty! So tonight when I looked over at his bed this is what I saw...

Date night!!!

I had to put this picture up! This is the gorgeous city sky line of Charlotte! I live 15 minutes from this and didn't' know it! Just beautiful!

Adam & I have had such an amazing weekend together! Garrett went with his Nana north to see his gran & pa for the weekend and that gave us sometime to really get some one on one time! I truly can't say enough about this weekend my husband has shown me aside of him I can't tell you the last time I saw it! Probably when we first meet! He has been listening and talking with me and being attentive, compassionate, romantic....kinda perfect!

We have done so much this weekend from laying in bed and just talking to planting flowers in the back yard even a little shopping and it was his idea! But Saturday night he took me to my first NBA basketball game the Charlotte Bobcats vs Atlanta Hawks. We had floor seats right behind the basket...I'm not going to lie it was so exciting!

We were so close the players were almost tripping on us! It was Great!

We ended the amazing night with a snack at BW3's and a movie in bed! I couldn't have asked for a better ending to a perfect date with my husband!

BOO...

My husband came home yesterday with this pumpkin full of candy and I course I thought Nana was sending goodies home for her favorite little boy Garrett...but to my surprise We had been Boo-ed. For those who aren't familiar with the term. Being Boo-ed is when you have been given a Halloween gift of any sorts but with that gift your given the responsibility to post a note saying you have been Boo-ed and Boo 2 other people. It really is a cute way to get to know your neighbors and celebrate Halloween in a good wholesome way!

If your interested in Boo-ing go to http://organizedchristmas.com and print off the two sheets to put into your boo-ing buckets or baskets and go leave them at two homes and watch the fun spread throughout your neighborhood.

Happy Harvest!

In honor of our heavenly babies

Today is the National Day of Remembrance for pregnancy and infant loss. This includes all babies who have died because of miscarriage, stillbirth, SIDS, or any other infant death.

My husband and I lost our twins do to molar pregnancy. We found out we were pregnant on March 7th 2006. I actually started bleeding in April and had to have an emergency ultrasound that scared us and the doctors so they considered our pregnancy high risk....there was one baby but two heart beats and they were very slow. Doctors sent me to have another ultrasound at the end of April because everyone was certain that I was having twins I mean we heard the heartbeats but in the other ultrasounds we only found one baby! This ultrasound there was one baby but no more heartbeats.....they were gone!

I had a D & C on May 5th. With a biopsy they found I had a molar pregnancy. Basically two babies born in one body! There were multiple organs such as a heart.

I don't know their sex but I LOVE and miss them very much! It's weird I still feel their apart of me! I thank God for them and I can't wait to hold my two babies one day!

Today I would also like to honor my heavenly sister n law...Frankie Dwiggins! My mother n law gave birth to two beautiful twin girls Georgianna and Frankie. Although Georgi was born healthy Frankie was still born. There really is no reason for Frankie's death except God's plan. The doctors said she was alive the day before but for some reason God wanted her home with him! I like to think to keep watch over my twins!

I never got to know Frankie (I mean I guess because my husband was a small child when she passed) I still love her and I know she is watching over her family! And can't wait for the day she is reunited with them!

A day with mommy & baby!

Yesterday Garrett and I decided to just have a fun day! So the only things we could do all day was play! NO chores! I gave the excuse that I thought Garrett would love it but I truly had fun myself...I can't explain the way it makes a mom feel when you look at your son and he's grinning from ear to ear and having the time of his life!

First we got up and ate breakfast then of course we had to watch Curious George (He's a big fan) Then I think we got out every toy we own and just played til we dropped! We both took a well needed nap and then off for a walk (well needed for me). Once I felt like I had walked long enough we went to the park.

Garrett fell and got hurt so we had to sit down and have a bottle!!!

They didn't have baby swings so mommy had to push me on these big boy ones!

Smile if your having fun at the park! If you could have seen my face their were no smiles! I was to busy trying to fight off all the mosquitoes!

When lunch time came we went back home and had us a Big lunch...and planted flowers! Another one of Garrett's favorite things is flowers! Nana took us out the other day and bought us a bunch so we planted pansies everywhere...pictures of our awesome gardening job later were not yet done! xoxox
